Balsamic Italian Chicken

This flavorful chicken dinner comes together so easily and quickly, it’ll make a weeknight dinner seem like a lot of time and effort were used to make it. That can be our little secret though. This recipe also includes a life changing secret ingredient for moist chicken.

My family eats a lot of chicken dishes during the week. We love chicken, but we were definitely in a rut and needing a new flavor! Hello balsamic Italian chicken!! I got compliments from my both times I have fixed it so I knew it was worth sharing.

The key components for making this meal are the balsamic vinegar and a packet of Italian dressing mix. Simple and this is where are all the flavor comes from! Now the secret ingredient that keeps your chicken moist is… mayonnaise! Don’t worry, this won’t make all your chicken taste like mayo. It just add moisture that you are going to really appreciate. My favorite mayo is any that is made with olive oil.

Balsamic Italian Chicken

4 Thin slice chicken breast

1 packet Italian Dressing mix

8 Tbsp of mayo

Grated Parmesan

4 tsp minced garlic

4-6 Tbsp of balsamic vinegar (can add more if desired)

Spread both sides of the chicken with mayo. Then season each side of the chicken with the dressing mix, parmesan, and minced garlic. Use hands and spread and evenly coat each chicken breast.

Heat a skillet (I used cast iron) with 2-3 tbsp. of olive oil over medium heat. Add the chicken. Cook for 4-5 minutes and then flip the chicken. Drizzle the tops with the balsamic vinegar and continue to cook till chicken reaches an internal temperature of 165 F.

*We served our with our favorite no knead crusty loaf bread, sauted mushrooms and onions, and salad.
