I never thought that I would make my own jam or jelly, but here it is. I’m so impressed by the simplicity of this recipe. Not only is it easy, but the chia seeds add some extra protein and fiber! They also help to thicken the jam without any cooking or any other added ingredients. The other great thing about it is that you can control the sweetness and how much sugar you add to it. The sweetener used today is maple syrup. Honey could also be used. You can leave it out completely, but my original version has 2 tbsp. for the entire recipe. This is just enough to cut down on some of the tartness. Feel free to adjust the flavor by tasting it as you go.
The three ingredients we are using here are: frozen strawberries, chia seeds, and maple syrup. The longest part of the recipe is waiting for it to thicken in the fridge. I recommend that you make this the night before you want to use it, or at least allow 4-5 hours of thickening. The only kitchen tool this requires is a blender. If you don’t have a blender, you could probably just smash the strawberries with a fork and have some chunkier pieces of strawberry in your mixture.
Chia seed jam can be used in any way that you would use any other jam or jelly. For about 4-5 weeks I have been on a toast kick for breakfast. One slice with peanut butter and banana, and one slice with smashed avocado and a fried egg. This chia seed jam takes the peanut butter and banana toast to a whole new level of yummy!
3 Ingredient Strawberry Chia Seed Jam
16 oz frozen strawberries, thawed*
1/4 cup chia seeds
2 tbsp. maple syrup (optional) increase amount as desired
Place strawberries in a blender and blend till smooth.
Pour blended strawberries in a bowl, then add the syrup and chia seeds. Stir till well combined.
Cover and refrigerate for at least 5 hours, preferably overnight. Stir occasionally during the first few hours to make sure chia seeds and mixed in well.
Store in the fridge in container/jar of choice.
*you can let strawberries thaw at room temperature or microwave in 30 second- 1 minute intervals till softened.
