Long time no see! Quick life update. I’m in my last semester of getting my Master’s degree in Human Nutrition from the University of Alabama! Life is busy with a full time job, part time grad school, and a two and a half year old. So recipe development and article development have been put on the back burner. Sorry about that! Today’s recipe is a popular favorite treat using the amazing classic combo that is peanut butter and chocolate! If you are fan of chocolate peanut butter cups, you’re going to love this recipe.
It’s 2 ingredients and there is no baking involved. My favorite part of this recipe is that you can modify it however you want! If you are a family dealing with allergies, these can easily be made with Enjoy Life chocolate chips that are nut, dairy, soy, and gluten free! You can swap the peanut butter for another nut butter or even sunflower seed butter! You can thin cups or mega cups. You can have thicker chocolate layer or a thicker center. Really you can’t go wrong. All you need to do is follow the guidelines below.
2 Ingredient Dark Chocolate Peanut Butter Cups
- Chocolate chips (I prefer Ghiradhelli 60% dark chocolate baking chips, Enjoy Life chocolate chips for allergy friendly version)
- Natural peanut butter (or any nut/seed butter you desire)
Melt chocolate chips in a bowl as directed on package. Scoop 1 tbsp. melted chocolate into each silicon muffin cup and gently roll around so that it goes up the edges about 1/4 of an inch. Put on a plate/tray and freeze for 5-10 minutes till firm.
While first layer of chocolate firms in the freezer, melt the nut butter in a bowl in the microwave till it is a smooth runny consistency. Take the silicone cups out and add 1/2 tbsp. melted peanut butter into each cup. Shake around so that it covers the chocolate completely. Allow this to freeze another 5 minutes to firm it up.
Once firm, take out the cups and add 1 more tbsp. of the melted chocolate on top and shake to spread evenly. Allow to freeze and firm up for at least 10 minutes before removing.
Store in a cool dry place, and enjoy!!
