A versatile fall veggie just got even easier to use! Microwave + spaghetti squash= delicious dinner in no time.
Spaghetti squash is a fall/winter vegetable favorite at my house. The most well known way to cook them is to cut them in half and then roasting them in the over for 30 minutes to an hour! I just don’t have that time in the evening. We eat dinner pretty early and by time I get home from work, I’M STARVING! I don’t want to spend longer than I have to cooking. Using the microwave method takes this cooking time from 45 minutes to 15 minutes! How awesome is that?!
I’ve made spaghetti squash on the blog before here. I’ve got a new recipe for it coming soon too! I love that I can stick the squash in the microwave and I can prepare the sauce and topping while it’s cooking.
Maybe this is a no brainer for other people, but I was really excited when I learned this quick method of cooking spaghetti squash. If you’ve ever made baked potatoes in the microwave, you will have NO problems making squash in the microwave. Let me show you…
Step 1- pierce the skin of the squash with a sharp pointed edge knife. Please be careful. They can be hard to pierce through. You want to make several shallow piercing around the squash. This allows steam to escape as it cooks.
Step 2-Put squash on a microwave safe plate and begin microwaving for 5 minute intervals. At the end of 5 minutes, feel the squash and turn it over. Cook for another 5 minutes. The amount of time needed to make the squash tender will vary based on your microwave and the size of the squash. Mine always take somewhere between 10-15 minutes. Be careful touching the squash with your bare hands. They get hot very quickly.
You are looking for the squash to be soft enough to pierce through the skin fairly easily and into the flesh of the squash. Once it has reached this point, use a towel or oven mitts to remove from the microwave.
Step 3- if you have time, let it rest for a few minutes. The inside will be very hot and creates a lot of steam when you open it. (See below). I was in a hurry so I cut mine immediately and just used a towel to hold it.
Step 4- Cut the squash in half length wise and scoop out the seeds from the middle.
Step 5- Season with salt and pepper and any other seasonings you would like. Rake through the squash with a fork to make it like spaghetti.
