Memorial Day and Mindfulness: American Flag French Toast and Patriotic Salad

Hi Everyone!

Happy Memorial Day.

I just wanted to stop in and give a quick thought and two “no recipe” recipes. Today I am very happy and thankful for the time I am going to get to spend with a lot of my family. God has abundantly blessed me in many ways. Even on terrible days I know that I still have some much to be thankful for. I imagine I have more to be thankful for than I realize and there are several things that I take for granted on a day to day basis. Today I want to be really mindful of why we celebrate Memorial Day. Freedom.

It really hit me yesterday in a message at church that there are men and women who choose to fight for me to have the freedoms I do who don’t even know who I am. People who have given their lives for our rights. Wow. All I can say is thank you so much, and I am choosing today to be extra mindful of this blessing today. Be present, be aware, and be thankful.

Now for two “no recipe” recipes. All that means is a really simple dish that can easily be put together without a recipe.

American Flag French Toast


4-5 slices whole wheat bread ( I used 45 calorie bread)

2 eggs

1/4 c unsweetened almond milk

1 tsp vanilla

1 tsp cinnamon

Toppings- light whipped cream cheese, banana slices, strawberries, blueberries

Heat skillet with non stick spray over medium heat. Scramble eggs, milk, cinnamon and vanilla in a bowl. Dip each slice of bread in egg mixture on both sides and place in skillet. Cook 2-3 minutes on both sides or till cooked through.

Top with cream cheese and arrange fruit like an American flag like pictured above.

*you can also use your favorite French toast recipe or just toast your bread in the toaster.

Patriotic Salad


Spring mix




Skinny girl Poppy seed dressing

Top a bowl of spring mix salad greens with freshly washed and sliced strawberries, whole black berries, and blueberries. Drizzle with dressing. Toss to combine.

*This is one of my favorite summer salads. You can adjust the ratios as needed. Try also adding walnuts or pecans. They taste great candied as well.
