Tonight I am sharing with you my new favorite green bean recipe. I honestly feel like I could eat a whole 1 lb bag of green beans by myself fixed this way. This recipe is awesome because it’s healthy, tasty, super fast and super easy. Those are my favorites when making a recipe. Now in keeping with the theme of quick, I’m going to keep this blog post short, sweet, and simple and give you this recipe. 😉

The Best Quick and Easy Green Beans
fresh green beans*
white button mushrooms
red bell pepper
1/2 white or yellow onion
1/4-1/2 c water
salt and pepper, to taste
Cut tips off of the green beans. Dice pepper and onions and slice mushrooms. Place the green beans, peppers, and mushrooms in the skillet with the water over medium high heat on the stove.
Bring to a boil and cover with a lid. Let cook over medium heat till most of the water has evaporated (about 3 minutes).
Remove lid, stir vegetables around and season with salt and pepper to taste. Toss around and let cook on low for about a minute.
*The picture is 1 serving. You can adjust the amount you use to feed your family. You can also adjust the quantities of the other vegetables to suit your preferences. If you are fixing more you may want to increase the water to 1/2 cup.
