Just wanted to share a quick recipe with you tonight. It screams summer if you ask me, and I hope you enjoy!
This beautiful salsa or salad is simple to make, fresh, and full of flavor. The reason I say salsa/salad is because you could definitely just eat it on its own like a salad, or put it on top of dish like a salsa. Versatility is awesome!
I’ll get right to the recipe!
First you want to slice and grill your pineapple. Grills, pineapple, are you picturing summer already?? Bring this to your next cookout. You’ll be loved for its flavor and you provided something healthy. Plus it’ll be easy for you to make. Grilling the pineapple helps bring out a wonderful flavor, plus the grill lines look beautiful. My mom is obsessed with grill lines on her food. I give her a hard time, but honestly I don’t blame her. (Don’t tell her I said that.)

While you grill the pineapple, chop up your red onion and mango. Allow you pineapple to cool and then chop it up as well.
The next step is to add about 2-3 tsp lime juice and black pepper to taste. Stir to combine and you are done! I’m allowing mine to sit in the fridge overnight so the flavors really meld together. I’ll throw it on top of a grilled chicken salad at lunch. Tonight I top grilled teriyaki chicken breasts with this salsa and it definitely didn’t disappoint!
